Slow Cooker Sweet & Sour Lemonade Chicken




Ingredients

4 chicken breast (frozen are ok)

1 (6oz) frozen lemonade concentrate, thawed

5 Tbsp. brown sugar

1/4 C. ketchup

2 Tbsp. White vinegar

2 Tbsp. cornstarch

2 Tbsp. cold water

Sesame seeds (optional)


Directions

1) Spray the slow cooker with non-stick cooking spray. Place the chicken in the bottom of the slow cooker.

2) Combine lemonade, brown sugar, ketchup and vinegar in a bowl. Mix well and pour over the chicken. Cover and cook on low 6-8 hours or high 3-4 hours.

3) Remove chicken from the slow cooker. Mix cornstarch and cold water together. Simmer the remainder of the sauce over medium heat on your stove top and add cornstarch mixture to the sauce, stirring until combined. Let the sauce cook over medium heat for about 5 minutes or until the sauce has thickened.

4) Pour sauce over chicken, sprinkle with sesame seeds and serve with your favorite sides.


If you don't wanna cook the sauce on the stove, you can take the chicken out of the slow cooker and add your cornstarch mixture to the sauce that is left in the slow cooker. Stir it in and then let it cook on high for about 30 minutes.

Maple Bacon Beer Burgers





Ingredients


1 lb. ground beef

2 tbsp. Worcestershire sauce

1/4 cup beer (any brand will do)

1 1/2 tsp. black pepper

6 slices thick-cut bacon

2 tbsp. maple syrup (you wanna use the real stuff but the pancake syrup will do just as well)

3 slices American cheese (or whatever cheese you prefer)

3 Hamburger buns


Directions

1) Combine the ground beef, Worcestershire sauce, beer and pepper. Form into 3 Hamburger patties.

2) Preheat the oven to 400 degrees. Place a baking rack on a foil lined pan. Place bacon on the rack and bake for 15-20 minutes. Carefully remove pan from oven. Brush bacon with the maple syrup. Bake for an additional 5-7 minutes, until bacon is crispy. Set aside.

3) Grill burgers approximately 5 minutes on one side, flip and cook an additional 3 minutes. Top each burger with cheese and melt.

4) Place burgers on bun and top each burger with 2 slices of bacon. Top with any additional burger toppings of your choice.

Prep: 10 minutes
Cook: 43 minutes
Serves: 3



With this recipe you really can use either syrup. The pure maple syrup can be a lot more expensive and I'm sure just like our family ,you try to save and buy stuff on sale or what you can afford. I used the pancake syrup this time and it still came out so good. Definitely was a big hit in our home.

Baked Ravioli




Ingredients

1 bag (25oz) Frozen Ravioli (Round or Square, whichever you prefer)

1 jar (26oz) Marinara sauce

2 C. Shredded Mozzarella Cheese

Parmesan Cheese, for sprinkling



Directions

1) Heat oven to 400 degrees. Spray the bottom and sides of a 9 x 13 rectangular baking dish with cooking spray.

2) Spread 3/4 cup of the pasta sauce in baking. Arrange half of the ravioli in a single layer over the sauce; top with half of the remaining pasta sauce & half of the mozzarella cheese. Repeat layers once, starting with ravioli. Sprinkle with Parmesan Cheese.

3) Cover with foil and bake 30 minutes. Remove foil and bake uncovered for 10 to 15 minutes longer or until bubbly and hot in the center. Let stand 10 minutes before serving.


Prep: 10 minutes
Cook: 45 minutes
Serves: 4


Instead of using the jar of sauce, I decided just to make my own. This way you have extra for anything else or just to freeze for a later use. Plus it actually tasted better with the homemade sauce. I also used the round cheese ravioli it worked out ok but the square would probably work better but either way it came out really good and the kids loved it.

Chicken with Balsamic BBQ Sauce




Ingredients

1 whole chicken, cut into pieces or 4-6 Boneless, Skinless Chicken Breasts

For the BBQ Sauce:

1 C. Balsamic Vinegar

8oz. of Tomato Sauce

3 Tbsp. Brown Sugar, Honey or Molasses (I used the Brown sugar)

1 garlic clove, minced

1 tbsp. Worcestershire Sauce

1 tbsp. Dijon mustard

1/2 tsp. salt

1/2 tsp. black pepper



Directions

1) Combine all the BBQ sauce ingredients into a small saucepan. Whisk until thoroughly combined, then simmer over medium heat until it's reduced by about a third. If it starts to stick to the bottom, reduce the heat to medium low. It should take between 15-25 minutes for the sauce to thicken and coat the back of a spoon.

2) Meanwhile, preheat a stove-top grill pan or the outdoor grill to medium heat. Season the chicken with salt and pepper.

3) Transfer 1/2 cup of the BBQ sauce to a small bowl. Place the chicken on the grill for about 10 minutes per side, brushing with 1/2 cup (or more) of the BBQ sauce for the last 2-3 minutes of cooking.

4) Transfer chicken to a serving plate and serve with the remaining sauce.


* You can also butterfly your chicken or slice it in half horizontally to make thinner pieces. It will cook faster and you will also have more BBQ sauce.


Makes: 4 servings.


This is a very tasty recipe. If you have BBQ sauce left over you can keep it for about a week in the fridge to use on something else.

Honey Glazed Bacon Wrapped Chicken




  Ingredients


1 lb (or more if you need it) Chicken breasts, cut into strips ( you can also use the frozen chicken tenders)

1 lb bacon (about 20 strips, these can be cut in half to make more if needed)

6 tbsp. honey

2 tbsp. Coarse mustard (this is NOT the same thing as yellow mustard)

2 tsp. lemon juice



Directions


1) Preheat the oven to 450 degrees.

2) Combine the mustard, honey, and lemon juice.

3) Wrap the bacon around the chicken and place in the baking dish. You'll want to use a bigger dish to fit it all..

4) Brush the bacon and chicken with the honey mixture. There will be some left over, save this for later.

5) Bake for about 13 minutes, or until bacon is crispy.

6) Take out of the oven , turn the chicken over and brush with the remaining glaze.

7) Bake an additional 13 or more minutes. Until bacon is cooked to what you want.



Because the bacon is greasy it may take a little longer to cook to get it just how you want it. So just keep checking on it until it looks how you want it to. This is definitely a great tasting recipe and the family really enjoyed it..We had no leftovers..



                                                                 





Chicken Nugget Casserole




Ingredients

1 pkg (13.5oz) Frozen Chicken Nuggets

1/3 C. Grated Parm Cheese

1 jar (26.5oz) Spaghetti Sauce (any flavor you want)

1 C. (4oz) Shredded Part Skim Mozzarella Cheese

1 tsp. Italian Seasoning



Directions


1) Place chicken nuggets in a greased 11in x 7in. baking dish. Sprinkle with Parmesan Cheese. Layer with spaghetti sauce, mozzarella cheese and Italian seasoning.

2) Cover and bake at 350 degrees for 30-35 minutes or until chicken is heated through and cheese is melted.

3) Serve with your favorite side dish.


Makes: 4-6 servings
Prep: 5 minutes
Bakes: 30 minutes


This is a super easy recipe and a kid favorite for sure. Its an easier version of a chicken parm. and tastes just a good.

Crock Pot Mongolian Beef




Ingredients

1 1/2 to 2lbs London Broil (cut into strips) or beef tip roast (cut into stew pieces)

1/4 C. Cornstarch

1 medium onion, sliced thinly

3 to 4 large carrots, sliced thinly

1/2 tsp. ginger, minced

2 Cloves garlic, minced

3/4 C. Soy Sauce

1/2 C. Water

1/4 C. Dry Sherry

3/4 C. Brown Sugar

1/4 tsp. Black Pepper



Directions

1) Toss beef strips / pieces in cornstarch & set aside.

2) Mix remaining ingredients in your crock pot & place beef over the top.

3) Cover & cook on low for 6 to 8 hrs.

4) Gently stir the beef into the sauce mixture & serve over rice , if you choose.


This is definitely a very tasty dish...I used the London Broil and it came out great..

Honey BBQ Meatloaf






Ingredients


1 lb. lean ground beef

1/2 cup plain panko bread crumbs

1 tbsp. plus 2 tsp. Worcestershire sauce

1 tbsp. dijon mustard

4 tbsp. smoky BBQ sauce

1 tbsp. honey

1/2 tsp. salt

1/2 tsp black pepper



Directions



1) Preheat oven to 350 degrees. In a large bowl, use your hands to mix together the ground beef, panko, 1 tbsp. of the Worcestershire sauce, the mustard, 3 tbsp. of the bbq sauce, the salt and pepper. Do not overwork the meat.

2) Shape the mixture into a long, thick loaf and place in an oiled/greased baking dish. Be careful not to pack the meat too tightly or you'll end up with a very dense, tough loaf.

3)In a small bowl, whisk together the remaining 1 tbsp. bbq sauce, the remaining 2 tsp. Worcestershire sauce and the honey. Spread evenly over the meatloaf and bake for 45 minutes. Slice and Serve with your favorite sides.

Grilled Cheesy Buffalo Chicken





Ingredients


1 lb. boneless chicken breast

black pepper

1/4 cup mozzarella cheese, shredded, divided

1 tsp. butter

1/4 cup Frank's Hot Sauce (or whatever hot sauce you choose)

1/4 tsp. celery salt






Directions


1) Preheat the grill to medium low heat.

2) Butter fly the chicken, by cutting it horizontally. Do not cut all the way through. Sprinkle the inside of the chicken with pepper. Evenly top the chicken with cheese and fold over the chicken to close it. It should look like the chicken breast before you cut it.

3) In a microwave safe bowl melt the butter. Stir in the hot sauce and celery salt.

4) Brush one side of the chicken with the hot sauce mixture and place the hot sauce side down on the grill. Brush more hot sauce over the top of the chicken. Cook for about 7 minutes. Flip the chicken and brush on the remaining hot sauce and cook until no longer pink; about 5 minutes more (or until done).

5) Serve with any side you choose and ranch dressing if desired.

Depending on how spicy/hot you want this depends on what type of hot sauce you use...You can definitely change it up by trying different ones and maybe even changing up the cheese and use a Mexican blend instead..Definitely many different ways to make it your own...



Unsloppy Joes







Ingredients

1 lb. lean (at least 80%) ground beef

1 can (15oz) sloppy joe sauce

1 tsp. chili powder

1 can (16.3oz) Pillsbury Grands biscuits (or whichever ones you want)

1/2 cup shredded cheddar cheese (2oz)



Directions


1) Heat oven to 375 degrees. In a large skillet, cook ground beef over medium-high heat until beef is thoroughly cooked, stirring frequently; drain. Stir in sauce and chili powder; simmer 5 minutes.

2) Press each biscuit into a 6-inch round. Spoon 1/3 cup meat mixture and about 1 tbsp. cheese onto center of each round. Fold dough in half over filling; press to seal. Place on ungreased cookie sheet.

3) Bake 9 to 14 minutes or until golden brown.



Prep: 30 minutes
total: 45 minutes
Serves: 8




With this recipe I'm not a huge fan of the sauce for the sloppy joes so I like to change things up a bit at times and make up my own. I'll use a BBQ sauce (any flavor you want) and then just add whatever types of seasonings that you want and that way you can also make it as spicy or not as spicy as you want. These really do come out great and definitely are not sloppy lol...

Crock Pot Sweet Spicy Sausage





Ingredients


1 tsp. extra virgin olive oil

1/2 tbsp. minced garlic

12oz chili sauce

12oz grape jelly

1/2 tbsp. crushed red pepper

1/2 tsp. cayenne pepper

32oz fully cooked sausage, cut into 1/2 in. pieces




Directions


1) Pour the oil in a small saucepan and heat over medium heat. When the oil is hot, add the garlic and saute for 30 seconds. Then add the chili sauce and grape jelly and mix well. Cook for about 10 minutes on medium heat, stirring often.

2) Place the sausage in your crock pot. Add the spices to the sauce mixture and stir. Then pour it over the sausage and stir. Cover and cook for about 1 1/2 - 2 hrs on high, or until the sausage is hot and the sauce is bubbly. Stir once after an 1 hr of cooking .



This would also make a great appetizer dish for a party. To make more ( and you just may need to because this is really really good) I would just double everything. If you don't want it too spicy either don't double the crushed red pepper or just omit it all together. Because it can get spicy.



BBQ Sloppy Joe Muffins





Ingredients

1 (7.5oz) can biscuits (10 count)

1 lb. lean ground beef

3/4 cup chopped onion (1 small onion)

1 tsp. minced garlic

1 tsp. seasoned salt (or salt and pepper to taste)

1 cup BBQ sauce (any flavor you want)

1 1/2 cup grated cheddar cheese




Directions


1) Preheat oven to 350 degrees.

2) Spray muffin tin with cooking spray. Roll out each biscuit until it's approx. 5" in diameter. Line each muffin tin with flattened biscuit.

3) In large skillet cook ground beef, onion and garlic until meat is cooked through and onions are soft. Drain excess fat if needed.

4) Mix in seasoned salt and BBQ sauce and heat until warm.

5) Fill each biscuit with a few tablespoons of meat mixture, filling each cup to the top.

6) Sprinkle each muffin with cheese.

7) Bake for 10-15 minutes until edges of biscuit are golden and cheese is melted.

8) Serve warm with your favorite side dish.


Serves about 5



If you need to make more just double the recipe. These came out great and the family really enjoyed them a lot. So you're probably gonna wanna make extra. These would also make a great little appetizer for a party

Super Sticky Asian Chicken Bites






Ingredients

Chicken Bites

8 ounces chicken breast, cubed (or however much you need to make)
1/4 cup all purpose flour
1 egg, whisked
1 cup panko breadcrumbs (any flavor you choose)

Asian Sauce

1 1/2 tbsp. vegetable oil
2 garlic cloves, minced
3 tbsp. honey
1 1/2 tbsp. creamy peanut butter
1/2 cup soy sauce
1/4 tsp. sriracha
1 tsp. sesame oil
1/8 tsp sesame seeds
extra seeds for garnish if desired
extra green onions for garnish if desired


Directions


For the Chicken Bites:

1) Preheat oven to 400 degrees.
2) Bread your chicken. (Flour, egg, then panko breadcrumbs)
3) Line chicken on a baking sheet ( you can line it with wax paper or spray with non stick cooking spray)
4) Cook the chicken in the oven for about 15-20 minutes (or until fully cooked and lightly browned on the outside.
5) Take the chicken out and toss with the Sticky Asian Sauce
6) Serve immediately and garnish with the sesame seeds and green onions if desired.

Sticky Asian Sauce

1) Heat the oil in a large pot.
2) Add the garlic and saute for about one minute.
3) Add in the honey and peanut butter and whisk until creamy and bubbly about 1-2 minutes.
4) Whisk in the soy sauce, sriracha, sesame oil and sesame seeds (if using them). Simmer for 2-3 minutes until thickened.
5) Set aside until the chicken is ready and then toss with the chicken.


Prep: 15 minutes
Cook: 15-20 minutes
total : 30-35 minutes

Serves 2-4


With this recipe if you are going to use it more for an appetizer than you'll definitely wanna double it up. Tastes great paired with white rice. A little  trick I learned to try to cut down on dishes and time is once you have the chicken cut put it into a bowl add the flour and mix around ensuring they are all covered, then add the whisked egg(s) and mix around and then do the same with the breading (adding more if needed) It saves a little time with the prep work.

Breaded Chicken w/Garlic Butter Fettuccine



Ingredients

Pasta

1/2 lb fettuccine
1/2 cup butter
4 cloves garlic (minced)
1/4 tsp. pepper
1/4 cup Parmesan cheese (grated) (I used the garlic parm blend)

Chicken

Olive Oil (enough to fill 1/4 inch of the frying pan)
4 oz Bread Crumbs (you can use any type you want (Panko, Italian etc.)
1/4 tsp pepper
1/2 tsp Italian seasoning
1/2 tsp. salt
1/4 cup Parmesan cheese (grated)
1/2 cup mayo


Directions

1) Combine the breadcrumbs, pepper, salt, Italian seasoning and Parmesan cheese in a bowl.

2) Coat chicken cutlets with the mayo and then coat with the breading mixture.

3) Add the Olive Oil to the frying pan and let it heat up for 2-3 minutes over medium heat.

4) Cook the chicken for 3-4 minutes on each side until cooked through.

5) Bring a pot of water to a boil and then add your fettuccine noodles.

6) In a sauce pan melt your butter over low heat. Then add the garlic, pepper and Parmesan cheese once the butter has melted and keep warm over a low heat until the pasta has cooked according to pkg. directions.

7) Once pasta is cooked, drain and return to the pot. Pour the butter garlic sauce on top and toss to coat.

8) Serve the pasta with the chicken and enjoy!



Depending on how much pasta you decide to do (if you do more than the 1/2 pound) you may have to double up on the garlic butter sauce so that your pasta is nice and covered. This definitely is a different switch from your normal chicken and pasta dish.

Oven Baked BBQ Chicken





Ingredients

Chicken Pieces (bone-in) - any type that you choose

Olive Oil

Spice Rub- Salt, Pepper, Paprika, Oregano, Onion Powder, Garlic Powder (or any type that you choose)

BBQ Sauce (any flavor you want)




Directions


1) Heat oven to 375 degrees.

2) After washing & pat drying chicken pieces, coat them with olive oil then sprinkle with the spices & rub into the meat.

3) Arrange chicken with meaty side down in a casserole dish and bake for 25 minutes.

4) Drain off fat & then turn chicken meaty side up. Put back in the oven for another 10 minutes, then take the dish out and brush a thick coating of the BBQ sauce on the chicken.

5) Put the chicken back in the oven for another 10-15 minutes. If you like extra sauce , than sauce the chicken once more during the last cook time. Bake until the chicken is tender and no longer pink.

6) Serve with a warmed up sauce for dipping.



There is no specific amount of anything to use. You can use as little or as much as needed for this recipe. Its not recommend thou to use Boneless Chicken as it could dry out but if you decide to I would cut the cooking time down somewhat to probably around 30 minutes total cooking time.

Drunk Dogs






Ingredients


1 (28oz) bottle Ketchup

1/2 cup. brown sugar

2 tbsp. whiskey

1 lb. cocktail wieners (cut up hot dogs)



Directions

1) In a medium saucepan over medium heat, mix the ketchup, brown sugar, whiskey & cocktail wieners. Reduce heat and simmer 1 hr.


* You can also make these in a slow cooker on low*


If using these more for an appetizer you definitely can double (or triple) the ingredients. You may wanna because they are really good and might not last too long.

Cook: 1 hr
Ready in: 1 hour 10 minutes

Crockpot BBQ Coca-Cola Pork Chops




Ingredients


4 Boneless Pork Chops, thawed (about 2lbs)

1/2 bottle (9oz) Sweet Baby Ray's BBQ Sauce (or whatever BBQ sauce you prefer)

12oz (1 can) Coca-Cola



Directions



1) Pour 6 oz Coca-Cola (or 3/4c) into bottom of crockpot.

2) Place pork chops in crockpot & cook on high for 3 hours or low for 6 hours, covered.

3) After 3 hours on high or 6 hours on low, drain juices from crockpot.

4) Mix together BBQ sauce & remaining 6 oz of soda in small bowl & stir well.

5) Pour mixture over pork chops & cook on high for 30 minutes more , or until done.


Prep: 5 minutes
Cook: 3 hrs 30 minutes / 6 hrs 30 minutes
Serves: 4



You can double this recipe if you want to make more than 4 chops.

Easy Overnight French Toast Bake




Ingredients


1/2 cup melted butter (1 stick)

1 cup brown sugar + 3 Tbsp.

1 loaf Texas Toast

4 eggs

1 1/2 cup milk

1 tsp. vanilla

2 tsp. Cinnamon

1 Tbsp. powder sugar + more for sprinkling

honey or syrup for topping



Directions

1) Put the butter in a microwave safe bowl, melt it in the microwave & add 1 cup of brown sugar. Stir until combined.

2) Pour the mixture evenly over the bottom of a 9x13 baking pan.

3) In a large bowl, whisk eggs, milk, 1 tbsp. of powdered sugar & vanilla.

4) Place toast bread in a single layer in the pan so it covers the whole area.

5) Pour half the egg-milk mixture over the entire layer of toast bread.

6) In a small bowl, combine the 3 tbsp. of brown sugar & 2 tsp. Cinnamon.

7) Sprinkle half the mixture on a layer of the bread.

8) Then arrange the second layer of bread & pour the rest of the mixture of eggs & milk.

9) Repeat with the rest of the sugar & cinnamon.

10) Cover with aluminum foil & leave in the fridge overnight. (You can leave it for a few hours in the fridge but the best effect is achieved when left overnight.)

11) Preheat oven to 350 degrees.

12) Leave the toast at room temp for a few minutes.

13) Put it in the oven & bake for 45 minutes. The first 30 minutes bake with the foil on then bake the last 15 minutes w/o the foil. Bake it until the top is nice and crispy & golden brown and the inside is soft.

14) Sprinkle with powdered sugar. Serve with honey or maple syrup.


Prep: 20 minutes
cook: 45 minutes
total: 1 hr plus 6-24 hours for marinating
serves: 12-14

Slow Cooker Sticky Chicken




Ingredients

3 lbs. Chicken thighs ( or whatever type of chicken you want)

3/4 cup. brown sugar, divided

1/4 cup. soy sauce, divided

1 tsp. ground ginger

4 cloves garlic, minced

1/2 tsp. cayenne ( you can omit this if you prefer)

1/4 cup tomato paste

1/4 cup water


Directions


1) Combine 1/4 cup brown sugar, 2 tbsp. soy sauce, ginger & garlic in slow cooker. Add chicken and stir to coat evenly.

2) Cook chicken for 4 hrs on low or until done. Meanwhile, combine remaining 1/2 cup brown sugar, 2 tbsp. soy sauce, water, cayenne & tomato paste. When chicken is done, put it on a lined cookie sheet  & brush all sides with the sauce.

3) Pour the extra sauce over chicken (don't waste one bit, trust me). Broil for about 5 minutes or until desired crispness.

4) Serve with white rice (or whatever side you prefer).








Marmalade Sausage Dogs




Ingredients

6 pork sausages

3 tbsp. orange marmalade (with bits)

French bread

mustard & ketchup


Directions


1) Preheat your oven to 350 degrees.

2) Place the sausages in a baking dish and smother the marmalade all over the sausages.

3) Put them in the oven for about 30-45 minutes depending on how long they take to cook.

4) Shake them around in the pan during cooking to ensure they are totally covered in the marmalade.

5) Slice open the bread and fill with the sausage.

6) Garnish with the mustard or ketchup if you choose.


This is a recipe for two but can be made for more depending on the size of the sausages you choose to use. And you can always add more of the marmalade if the 3 tbsp.'s doesn't seem to be enough.



Glazed Pork Chops (EASY)!!






Ingredients


4 Thick cut pork chops

1/2 tsp. paprika

1/2 tsp. cayenne powder

1/2 tsp. garlic powder

1/2 tsp. black pepper

1/2 tsp. salt

4 tbsp. brown sugar

olive oil


Directions

1) In a bowl, combine your spices (paprika, cayenne pepper, garlic powder, black pepper, and salt)

2) Rub the pork chops in the spices generously

3) Heat olive oil in an oven-safe skillet over medium/high heat. When the oil is hot, add pork chops. Cook for about 3-5 minutes on each side or until they have a nice caramelized brownness to them. Once you feel that they are looking browned, add a tbsp. of brown sugar to each pork chop. Turn each pork chop over , so both sides get some melted brown sugar. (Don't add the brown sugar too early or else the sugar will burn and smoke up the room.)

4) Bake at 350 degrees for 15 minutes, to make sure the pork chops are cooked through.

5) Before serving, pour the glaze that's formed in the pan over the chops. Serve with your veggies of choice.

Maple Glazed Pork Chops




                                                        
Ingredients


4 Boneless Pork Chops

2 tbsp. oil

Sauce:

1/4 cup Real Maple Syrup

3 tbsp. ketchup

2 tbsp. soy sauce

2 tbsp. apple cider vinegar (you can use white vinegar)

1 1/2 tsp. minced garlic

1/4 tsp ground ginger

optional: Fresh thyme for garnish



Directions


1) Drizzle a large skillet with oil. Add pork chops and cook over medium-high heat 4-5 minutes on each side till cooked through.

2) In a small bowl whisk together sauce ingredients. Add to skillet and cook another 3-5 minutes , spooning sauce over the pork chops and turning to coat. Serve hot and garnish with fresh thyme if desired.

Roasted Italian Sausage & Potato Bake



Ingredients


14 Links Italian Sausage (Sweet or Hot), cut into thirds

10 Medium to Large Russet Potatoes, peeled and sliced into 1/2" think slices

2 Cloves Garlic, Minced

2 tbsp. Fresh Rosemary, Chopped

3 tbsp. Balsamic Vinegar

3 tbsp. Extra Virgin Olive Oil

Salt and Pepper, as desired




Instructions


1) Preheat oven to 425 degrees.

2) Combine all ingredients into a large bowl; mix well.

3) Place mixture onto a baking sheet (line with foil for easy cleanup) and bake for 1 hour, turning after 30 minutes until sausage and potatoes are cooked through.

Total: 1 hour 10 minutes

3 Ingredient Brown Sugar Chicken




Ingredients

4 Boneless , Skinless chicken breasts
1/2 cup brown sugar
1 (0.7 oz) pkg. Italian dressing mix


Directions:

1) Preheat oven to 425 degrees. Line a 9x13in baking pan with aluminum foil.

2) Combine the brown sugar and Italian dressing mix. Coat both sides of the chicken with the brown sugar mixture. Place in prepared pan. Top chicken with any remaining brown sugar mixture,

3) Bake for 20 minutes. Turn broiler on HIGH. Broil chicken until brown sugar caramelizes about 1 to 2 minutes. Watch it carefully so it doesn't burn!.



This is super easy and can be doubled if needed. The kids definitely enjoyed this a lot...Quick dinner fix and most of the time everyone already has these three ingredients already which also makes it such an easy meal.

Sticky Garlic Chicken Bites



Ingredients
  • 1 lb. boneless, skinless chicken breasts, cut into 1-in. chunks (you can use more if you need)
  • Kosher salt and freshly ground black pepper ,to taste
  • 2 large eggs , beaten (more if using more chicken)
  • 1 cup Panko breading (again if using more chicken you may need extra)
For The Sauce

  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tbsp. hoisin sauce
  • 1 tbsp. freshly grated ginger
  • 1 tbsp. Sriracha
  • 2 green onion, thinly sliced (optional)
  • 2 tsp sesame seeds (optional)

Instructions

  1. Preheat oven to 400 degrees. Lightly oil a 9x13 baking dish (or larger if using more chicken) or coat with nonstick cooking spray.
  2. Season chicken with salt and pepper , to taste. Working in batches, dip chicken into eggs, then dredge in Panko breading, pressing to coat.
  3. Add chicken to prepared baking dish. Place into oven and bake until golden brown and crisp, about 15-20 minutes.
  4. In a medium saucepan over medium high heat, combine soy sauce, honey, garlic, hoisin sauce, ginger and Sriracha until slightly thickened, about 1-2 minutes. Stir in chicken and gently toss to combine.
  5. Serve immediately, garnished with the green onions and sesame seeds, if desired.


This recipe most definitely can be doubled if your making more than the pound and take it from me you very well may need to, it is that good. The kids definitely loved it. I also found it easier to combine everything in a big bowl instead of the pot, made it easier to mix it together.

Balsamic Glazed Meatloaf




Ingredients


Meatloaf
1 1/2 lbs. ground beef
3 slices of white bread
1/4 C. of milk
1/4 C.  onion, finely chopped
1 clove garlic, finely minced
1/2 C. parmesan cheese
2 eggs, beaten
3 Tbsp. parsley, minced
1/2 tsp. seasoned salt
1/2 tsp. salt
1/4 tsp. ground black pepper
2 tbsp. ketchup
1 tbsp. balsamic vinegar

Balsamic Glaze
2 tbsp. ketchup
1/2 tbsp. balsamic vinegar
1/2 tbsp. brown sugar


Instructions

1) Preheat oven to 350 degrees.

2) Pour milk over bread and let sit for a few minutes so it absorbs the milk.

3) In a large bowl combine the beef, milk-soaked bread, onion, garlic, cheese, eggs, parsley, salts and pepper, ketchup and vinegar.

4) Mix with your hands until well combined.

5) Line a baking sheet with foil.

6) Form mixture into a loaf shape on baking sheet.

7) Combine all glaze ingredients in a bowl. Stir until well combined.

8) Spread evenly on top if meatloaf.

9) Bake for 45-60 minutes or until a meat thermometer reads 160 degrees.

10) Remove from oven, cover loosely with foil and let rest for 5-10 minutes before slicing.


Prep: 15 minutes
Cook : 60 minutes
Total: 1 hr 15 minutes
Serves: 8







Parmesan Garlic Roasted Potatoes





Ingredients


2 lbs red potatoes (or whichever ones you prefer), cut into 1 in. pieces
2 tbsp. olive oil
1/2 C. Grated Parmesan Cheese
3 garlic cloves, minced
1/2 tsp. Oregano
1/4 tsp. Salt
1/4 tsp. Pepper
Chopped Parsley for Garnish


Instructions


1) Preheat oven to 400 degrees. Lightly spray a baking sheet with non stick cooking spray.

2) In a large bowl add the olive oil, parmesan cheese, garlic, and oregano. Toss with the potatoes until coated and lay in a single layer on your baking sheet. Salt and pepper to taste. You can also sprinkle extra parmesan cheese on top if you like.

3) Roast for 30-35 minutes or until golden brown and crisp. Serve with parsley sprinkled on top.


Prep: 10 minutes
Cook: 30 minutes
Total: 40 minutes

Honey Soy Chicken



1 1/2 - 2lbs boneless, skinless, chicken thighs (most of the fat discarded)

3 TBSP Vegetable Oil

3 TBSP. Soy Sauce

1 tsp. Sesame Oil

5 TBSP. Honey

4 Cloves of garlic, Minced

1/2 tsp. ground ginger

1/2 tsp. ground black pepper




Instructions:

1) Preheat the oven to 425 degrees. Line a 8x8 oven proof pan / dish with 2 layers of tin foil. (Trust me this is a great step , easy cleanup)

2) In a small bowl, whisk together vegetable oil, soy sauce, sesame oil, honey, garlic, ground ginger and ground pepper.

3) Place the chicken thighs in the foil layered pan then pour the mixture on top. Turn the chicken to coat it all in the sauce.

4) Bake, uncovered for about 40 -45 minutes, checking occasionally to make sure tops are not browning too quickly. (Cover with foil if they are)

5) Remove the chicken from the over and let sit for 5 minutes before plating. Don't throw away the liquid.

6) After plating the chicken, pour sauce over top of the chicken. You'll definitely want to do this because the sauce is delicious.

7) Serve with white rice or any sides you choose.



I highly recommend using the foil. There was no cleanup afterwards and it makes it so much easier too.. This dish can also be made with chicken breast is you choose. Just adjust the cooking time.
